  • 60-80ml added virgin olive oil

  • In a massive bowl, mix the onions, tomatoes, garlic and basil, taking care not to mash or break up the tomatoes too significantly. Add the balsamic vinegar and extra virgin olive oil. Add salt and pepper to taste. Combine yet again. Cover and chill for at least an hour. This will permit the flavours to soak and blend with each other.

    Slice the baguette loaf diagonally into twelve thick slices and lightly toast them till they are light brown on the two sides. Serve the mixture on the warm slices of bread. If you desire the mixture at area temperature, take away from the fridge half an hour prior to serving.
