This is a recipe for “Crespelle” which are paper-thin pancakes, the Italian equivalent of France’s crpes, and like the French edition, they can be both sweet or savory. Quite good! The youngsters and I loved it. My only complaint was that the batter for the ‘noodles’ was kind of thick and I had trouble acquiring it to make thin noodles. Perhaps I measured something incorrectly. Update: created it once more final night and had no difficulty with the noodles at all! The tiny ones loved it, my picky 3 12 months previous even licked his plate!

I was worried that producing the crepes would be a soreness, but they cooked so quick that it was no problem. Significantly much less of a discomfort than possessing to roll out pasta dough! The batter did appear a little thick because I anticipated it to be more like creating crepes, I was tempted to thin it but I didn’t and they turned out properly. I extra bacon, sauteed mushrooms, and lemon thyme to my ricotta mixture. Delicious!!

This recipe is so reminiscent of my excellent Aunt’s manicotti.. viewing her & my mom standing above a griddle creating the noodle crepes .I had not manufactured them in many years but loved teaching my daughter how to do so..not only a excellent recipe but a fantastic walk down memory lane for me!

I produced this and did not change a issue. Fantastic Mannicott’s. I will never get the store purchased noodles. Do make your own sauce and make the crepes a day before. It is time consuming to make all of this in a single day. Delishio. -:)

I’ve been producing homemade manicotti for a number of many years now. I constantly include a pinch of fresh grated nutmeg to the ricotta combine. It enhances the cheese soooo a lot. Annnd if you have gone to all the problems to make your very own crepes please do not cover it with jar sauce.
