I loved these pickled eggs, but I have a question- I would like to use the pickled eggs for deviled eggs, so could I go ahead and minimize the whites in half and remove the yolk prior to placing them in the jar with the beets/juice? I cannot envision that it would impact the wanted end result and would make the reduce side pink all over. I am afraid to consider it for our loved ones Easter dinner without some input from all you excellent cooks out there! Thanks

Love Pickled Eggs and Beets. I use to make them at Easter and Christmas. I use sliced beets and I would add cinnamon sticks and definetely no water.
Same way our loved ones has produced pickled eggs and beets several many for many years. will not throw out the beet juice. use alternatively of water. the shade is even much more intense and adds additional taste. a particular note* . when my husband came into the family members in 1973 and had these at our traditional Easter dinner. he totally loved them and they have been officially renamed Pickled Do Do Eggs by him ( the o is pronounced as a extended o) . and the title has caught now for 46 years! 🙂
Great Stuff !! Advised by my aunt she mentioned to add about a tablespoon of pickling spice(McCormick or Ball).. Also, I used ALL of the juice from the 2 cans of beets. You can possibly get away with 3/4 cup sugar to probably let the vinegar shine via a small far more. I really like it!!
Quite excellent recipe, the exact same as I ate as a kid expanding up in the Penna. Dutch location. I did add a handful of peppercorns and a handful of cloves.
